How the tip-out math works
For a fast server tip-out estimate, add card tips and cash tips, subtract tip-out, then compare the result against hours worked. If your restaurant uses a percentage of sales, the basic formula is:
take-home tips = card tips + cash tips - (sales × tip-out %) - extra tip-out
